Award Winning “Bad Boy” Turkey Chili

Now you too can make award winning chili! When I first decided to partake of the 3rd Annual Day by Day Hope Foundation Chili Cook Off competition, the last thing I expected was to win. Nonetheless, I’m grateful for the win, the support and the camaraderie shared with all cooks. Congrats to all!

Ingredients

  • 2 tablespoons olive oil
  • 1 Spanish onion, chopped
  • 1 tablespoon garlic, minced
  • 2 chipotle peppers in adobo, minced
  • 1 tablespoon tomato paste
  • 1 can diced or stewed tomatoes
  • ½ teaspoon oregano
  • ¾ teaspoon ground cumin
  • ¾ teaspoons smoked paprika
  • ¾ teaspoons red pepper flakes
  • 1 teaspoon salt
  • 1 bay leaf
  • 1-14oz. can each – black, red and baked beans
  • 8oz chicken stock
  • 1 ½ pound ground turkey breast

Directions

  1. In a large deep saute pan, heat olive oil. Add chopped onion and saute for 5 minutes.
  2. Add garlic and cook for one minute.
  3. Add chipotle and tomato paste and mix until well incorporated.
  4. Add stewed tomatoes and break down as it is cooking.
  5. Add remaining ingredients except turkey. Cook on low heat.
  6. In a separate pan, break down turkey as it cooks in the remaining tablespoon of olive oil. Cook through until brown.
  7. Add turkey to bean mixture and bring to a simmer for about 30 minutes to incorporate flavors. Adjust with salt and pepper if needed.

Serves 4-6.

To make empanada chips, simply purchase pre-made empanadas discs found in the frozen food aisle. Defrost and cut into 8 triangles. Then deep fry for one minute, until golden brown. Serve immediately.

    Tried this recipe for dinner and it was AWESOME!!!!. Everyone enjoyed it even the picky eaters in the house. Will definitely make this again. One of the best chili recipes!
